Even though I have no experience with a Demon they should function no different than a Holley. When your engine is idling and you turn the air/fuel screws all the way in does it kill the engine or have any effect on the idle quality at all? This will determine whether or not it is the carb idle circuit or something else. If it has no effect than you need bigger diameter air bleeds (if they are the screw in type) or you will have to open the rear throttle plate slightly to get more air into the engine to lean out the a/f signal.
