Temp wiring question on Injector harness

I am swapping EFI onto an older carburated mustang and I am removing all the unneeded wires from the injector harness. Along with the EGR, purge canister and oil guage I want to get rid of the temp since I am running an aftermarket guage for this. On the injector harness there are two different temperature sensors. One 1 wire plug and another 2 wire plug. I know one is for the stock guage and the other the computer uses for engine management. Which one is which?

the 2 wire up by the T stat housing mounted in the metal tube that runs to the heater core is the one the EEC uses. make sure you keep that one. The other one on the drivers side is the one to replace with the after market sending unit
 
I don't have the coolant tubes on my intake (Spyder Crb to EFI Intake) so can I just mount that sensor in the intake near the T-Stat? I don't actually have the sensor yet to see the thread size... Just now mocking everything up...
 
It hasn't on my car and it's been capped for over 5 years now. I've seen people pull the little tube out and put in tiny freeze plugs to block them as well. Next time I have mine off that's what i am going to do to clean up the engine more.
