My old big block 79 was converted to manual, and I didn't mind it, but that was years ago.
Ditch the pulleys if you use the elec. fans, and don't wire them up without using a relay.

You definitly need something with a shroud, the 16" with the shroud would be better than the 18" without it.
If you have gas on the vacuum side of the regulator, it is shot! The diaphragm is ripped. Send it back and get a new one.
If it only blows on high then the resistor is more than likely the problem, not the switch. I'm not sure where it is located on the Mustang, but...
If you fix it right away without putting too many miles on it you should be O.K.
