Idle issue - Side exit exhaust

First off, I believe the cats are plugged on it. I have a weird idle thing going on every once and a while, so I looked at the simple stuff first: idle air control valve, throttle cable, etc... I've pretty much narrowed down the problem to cats/O2's. The idle has a tendancy to rest between 1000 and 2200, but if I go full throttle and hit the redline, it'll idle down correctly (600 or so).

So, knowing that part of the problem might be plugged cats or O2's, i'd like to put on an off road X or H pipe, and weld in bullet style mufflers in place of where the cat's would have been. Then right after the X or the H, pipe the exhaust so that it exits right in front of the rear wheels. Has anybody seen this done before? Is there something that I'm overlooking? This seems like a really easy way to get a good performing/sounding exhaust with side exit.
