Is Drilling a wider header pattern into a alum head a good idea

Hey guys,
Hows it going. I have a 351 based engine stroked 408 toped with a set of edelbrock vc jr cylinder heads. These heads have a 2.00inch header bolt pattern. I had bought a set of kooks headers from kooks while ago, knowing they make a adapter plate for my conversion. And come to find out i was talking to someone who was new to the company and they do make not make a adapter plate for me situation. So i get ahold of a Sr tech guy at kooks and he tells me to have the wider pattern drilled and tapped into the cylinder heads. So what i need to know is if i have my cylinder heads drilled and tapped for the wider pattern will i run into and water jackets, or intake manifold runners. I would not have them go nearly as deep as the original holes. They tell me this is a very common thing people do this all the time, if you can give me your opinion on this or maybe someone has done this before thanks alot. Tim
