So I'm feeling rather.. umm... ridiculous now.
I THINK I've solved my problem.
I tried one last time to adjust the shoes, but noticed the star wheel was a little tough to turn out sometimes and thought, "Maybe that wheel is not adjusting and dragging?"
SO not only did I liberally lubricate the adjuster wheel, I also put anti-seize on the backing plate for all the shoes (which I hadn't done either) and guess what... no more dragging!
Sigh.
I drove it about 600 miles from Austin to Houston and not one hiccup and the brakes worked perfectly.
So I guess the moral of the story is... never forget lube.
