Id run the Vic jr with a nitrous plate system. Not the dual plane. Just to even out the distribution across the cylnders. Youll loose some low end but with the juice you wont miss it. And as far as how much shot the shortblock is capable of handling is debatable. I know a few people with carb setups spraying 200 hp shots. I personally have run up to 150 with an efi dry shot system. My original 89 still has the NOS 150 kit on it and that was near 20 years ago. And has probably 250+ passes and 80000 miles on it.
 
+1. I am currently spraying 150 on a dry kit. You will never miss low end torque with nitrous. It hits really hard at any rpm. You might miss having drivetrain parts that don't break all the time though.
