I am going with 15x7 stlyed steel wheels. 225/60 on the rear and 195/60 on the front. Is there any benefit to putting 15x8 on the rear and how would that change the look? Also do you think the tire size combo will look pretty good.

Using a wider wheel in the rear will give you a little better traction. I'd try a little wider tire in the rear though, maybe a 235 or 245/60. The wider wheel will make the tire sidewalls straighter and give a better contact patch.

Just with trying to carry a spare,

I had 15x8 rims w/5" backspacing and tucked 235/60-15 tires into the back of my 65 with no fender rubbing, I just had to make sure the lower edge of the inner fender was pointing down or away from the tire. and I thought it looked great with the fat tires in the back.
