351w Build, Compression Ratio? Build

I'm in progress in swapping a 351W I had it machined and cleaned up, bored .030 over in my 66 coupe. I have extra time on my hands so instead of having it built, I took it in my own hands to build it. When I'm coming trying to calculate the compression so I know which fuel to run I get a different results so I'm looking for a little help. A list of all essential componets:
-block is a 85' 351W stock crank, rods
-KB124-030 pistons: +6.500cc
-Twisted wedge heads: 61cc combustion chamber
-Head Gasket Thickness: 0.039
-Cam: Comp Cams SK35-246-3
-Intake: Weiand Stealth Intake

This doesn't tell what thickness headgasket they used, but piston manufacturers always give a compression ratio with different cc heads for the pistons they sell.

Here are yours:

This is claiming 10.8:1 with 60 cc heads and you have 61's. You are looking at premium fuel at minimum.
