5.0 Re-wiring and clean up

Anyone re-worked the wiring harness in their fuel injected 5.0. I'm thinking about starting on it this weekend. My wiring came from a donor car that was converted to carb. Lets just say that the guys who did it, didn't have a clue or care about cutting wires. Instead of fixing it up then, I just got the car up and running. My car ran okay, occasionally had the usual idle problems, but the engine bay was always crappy looking because of the spliced wires. Right now the car is down for other reasons so I thought it would be a good time to get started. I'm going to map out which wires I don't need anymore and try to clean everything up. Anyone bypassed the salt and pepper shakers? If you have any ideas on other things to do let me know.
