to adjust the height/stiffness of my gas pedal? Mine used to feel like it was almost even w/ the brake pedal, but after messing around with the car (Changing the intake manifold) I've noticed the pedal is noticeably lowered with a much softer feel to it.

Check your return springs if they are not attached to the same spot as they were before. That will cause different throttle pedal feel.
