I am just curious about this........... What are some good ideas for custom interiors, or what are some nice ones you all have seen that are tasteful, but not overly flashy ?

Not to be a dick, but try doing a Google search of interior photos. This could help you get some ideas as to what direction you want to go with the interior.
Depending on what model and interior trim package you have, something like new seats or some exterior color-matched pieces can really set off the interior. Personally, I would avoid putting any chrome/metal accents you would lay your arms so you don't burn yourself
