Gloss body - flat stripe paint question

Going to be painting the '67 in the next couple weeks here (wish me luck, I'll need it)

I'm doing a gloss BC/CC for the majority of the body, but I'm going to have a flat black stripe running down the center of the car using a flat black urethane and a flat urethane clear coat.

I'm thinking if I shoot the entire car with the color, then come back and do the stripe I'm going to have a ridge that I won't be able to color sand down.

So should I mask off my stripe, do the gloss color and clear, then come back and "reverse" mask for the stripe and spray the flat color and clear so that the paint will hopefully be at the same level or thickness?

If you haven't picked up on it yet, this is my first paint job... Both feet, WAYYYY in.

Shoot the hood in the area of the stripe. Mask the stripe then paint the gloss.
Now for the hard part. Clear coat the car. remove the stripe masking and mask the rest of the hood. Clear coat the stripe. Its tough because you need the two clears to end up being the same level. I would practice on a old body panel first.
