On my 97 mustang i was thinking about making a switch for my fan for when i go to the strip. So i can leave the fan on while the car is sitting. They way me and my dad were going to wire it, so that the computer will still control the fan automatically, but i will have a override switch to turn it on as needed. Will this work? It won't mess up my computer or anything will it? I don't want a fully manual fan because i will most likely forget to turn it on... lol Any opinions? Anyone do this before?

Just unplug the sensor switch. It's a multi-wire plug in the engine bay. Once it is unplugged, the fan will run all the time.

if you want it to run while the car is not on it woudl be pretty easy i think, just find the power wire that turns the fan on run a relay and wire it up to a switch direct from the battery, and a fuse inline of course, then flip the switch and the fan will cut on or stay on cuz it will be getting power constantly, i dont see any issues with this but you might want to read up on the electical ssytem and see if there might be some kind of issues that might arise.
