91lx convertible questions

hi guys newbie here i was hoping i could get a couple of questions answered here by the guru's,
1. i have a 91 2.3l lx convertible i am restoring and after sitting for three years under a cover , has had fluids changed, emission test and starting to look it over for things to get replaced .after driving it around for a couple of days i have watched the temp gauge float from the l or a of normal to about m , have had electric fan come on once after i had sat for about 30mins but other then that it never seems to get to hot , i should say it gets plenty hot blowing thru heater just not ya know boiling over hot ,
my first question is about water flow should i be
able to see the flow of water with the cap off, i ask this because the water gets hot but i don't see any movement of water inside with cap off, i flushed the system with a preston t valve kit and did see alot of water flow when i forgot to put the t cap on as i started the car so i am pretty sure i have plenty of water pump action but i wonder if i might have a partially pluged radiator? also i don't see a plastic resevoir attached to the radiator should i get one as i do get a small
maybe drinking cup size circle of fluid i am assuming coming out the tiny side port on the neck of the radiator cap,

thanks rusty for the ideas thermastat next on my list , and am picking a reservoir tank up today, just weird if i drive home from work about ten fifteen minutes of driving, temp sits about top of a of normal most of the time, but when i pull in and pop the hood and open the radiator cap the water is very hot but it looks like it is just sitting there not circulating, but heater blows nice and hot , i wonder anyway to check water pump, i did start car with my heater hose t cap open water shot out about three feet so i assume that shows i have water pump flow???
