94 Gt Running Extremely Cold

No to both. I'd want to know explicitly what temps the car is seeing. The IR thermo gives an idea, but it's relative. For instance, if you went from a 180 to a 192 stat, the IR reading might have gone up 12*, but it might not be the absolute temp. We need the absolute temp now (from the ECT, a thermometer, etc). As long as you're running at 170*ish, you should be fine. The EEC leans out at around that temp to help get the car up to temp.
 
I pulled a 195 tstat out of it that was operating properly. And as for the eec leaning out that's what I was worried about, running lean, having detonation and burning up pistons. I rather run rich and just pull plugs more often.
 
The EFI won't lean out like that. It's a slight variation to eek temps up a smidge. This goes back to the Fox III (87-93) code. If you lean out a meaningful amount, you'll throw codes.

If your 195* was operating properly, your temps should have been around 205* with the fan on or off (unless you had the AC on or it was super cold and your were on the highway, in which case it would have been closer to 195).
 
This morning it ran a lot warmer about middle most of the way to work. Hit the tstat housing it read around 200 the ect was around 200-202. It seems as if it is operating properly. I'll make sure on the trip home.
