I'm a little confused but here it goes. you have to push the clutch in to start the car anyways so that's not the problem, unless the safety swith was the problem in which case the car shouldn't start at all. i'm thinking the starter is stuck engaged, after you start the car the grinding you hear is the starter and it might be jamming the flywheel stalling the car. try taking a long skinny pipe or very long screwdriver and going betwen the header tubes to get to the starter soleniod, the use a hammer to tap it. you can try and get it from underneath also. sometimes this will release the armature and pull the gear back in, if this works and the car starts fine then you need a starter. if not check all the connections from the starter back to the battery. This is my best guess going by your description.
