Engine problems and shifting issue

Ok so I am new to owning a Mustang and I have noticed that when I go full throttle the car does not respond. The RPMS drop and its almost as if the motor cuts off. When I let off on the gas it then kicks in and the motor runs fine but sounds as if its hesitating. What could be the issue? BTW I just got the car on Friday, it has no leaks, starts up fine and has a BBK (I think) exhaust on it besides the CAI for aftermarket parts. The motor is obviously the 4.6 liter and when it idles it idles fine. Any thoughts? Im thinking bad injectors or clogged fuel pump..

As far as the shifting, its hard to put it in first gear. The previous owner explained that he put in a new clutch and it makes this noise (like whining) when the clutch isnt pressed down. But I have to go to second in order to put it in first sometimes. It makes driving a pain in the ass... Any thoughts on this as well?? Thanks.
