head gasket question

I've been stuck on a seismic boat for 2 months and have been combing the forum to keep sanity (and learn about stroker motors). I can't find an answer for this question though:

IF you were to build a budget 393, using a 3.85in crank, stock rods and 302 pistons, the general consensus on compression is around 12 (give or take depending on cc of the chamber).

Could you run a thicker head gasket to get it back down to 10.5ish for pump gas? Or would that be too thick to work?

If i run Trick Flow heads, I need pistons with valve reliefs for them, or will dished pistons work? (dished might also lower the comp. ratio too, right?)
