Tire question

OK I just have a few questions about how tires are labeled/rated/whatever.

Ok so I understand the first part is the width in millimeters. Now, I don't work in millimeters, so is there anyone who can give me an idea of what tires would match what wheel sizes?

I also don't understand the height to width ratio. Like the 35R, 40R, etc. Can someone explain it to me? I read somewhere that the smaller the number, the less sidewall, which gives you better steering. Is this correct?

Also, when you buy new tires, how do you know how much air they need? (stupid question I guess) :(
