the lower the number, the more deeper of a sound (bass). also, the other way around, the higher the number, the higher pitched sounds.

To put it in perspective for you, the human hearing range is 20Hz up to 20,000Hz (or 20K). The equalizer will increase or decrease the loudness at each of the levels given. For a car stereo system, you'll likely need to increase the lower frequencies and reduce the higher frequencies to make it sound more realistic. IMO
