So when driving home in my 95 GT, I had a weird feeling shift into 5th gear. When I got off the freeway and tried to shift into 1st at a red light... I couldn't put it in any gear. If felt like all the gears were blocked and the stick shift only had N.

I had it towed to my house and have not been able to put it in gear when the engine is on. If the engine is off I have 1-5+R.

    My car has a stock t-5 w/ a Pro 5.O shifter.

Any ideas on what causes this and how to fix it?

Did your clutch or clutch cable take a dump?

I'd start with the clutch quadrant/pawl and cable. Is there a lot of freeplay in the cable before there's resistance?

It's a clutch problem. Hopefully it's just a cable problem, but likely it isn't. Most likely you have a spring that has popped out of the clutch disk.

Had the same issue when my clutch cable became stretched out. I noticed it quickly, and was able to get it fixed before needing a tow home one day. Swapped for the full Steeda replacement kit, and have loved it ever since. The FWA is awesome!
