If your gonna stick with a 2 barrel you must not really be interested in performance,so just leave it stock and take it to car shows
Have you EVER seen a fast street car with a 2 barrel carb?You should look into some of the racing classes that restrict you to a 2 barrel carb. There are 600cfm 2 barrels out that that'll throw down on a 4 barrel in a heart beat.

Now granted, i'm not saying they're better otherwise i would run one...i'm just saying there are classes that only allow 2 barrel carbs (or used to be back in the day) and there are ways to tune a big 2 barrel so that you have just as much air and fuel at WOT as any 4 barrel would, so in the long run it doesn't make any difference how many barrels you have. Make sense? Also a LOT of oval track classes only allow 2 barrel carbs. It's their way of limiting power...but still, what's the difference between a 600cfm 4 barrel and a 600cfm 2 barrel?
i think that summit kit is a decent kit for a decent price. you could beat it with used 83-85 stuff. I picked up a used edelbrock performer rpm intake for $80 an a holley 600 4 barrel carb for $75 shipped off ebay. 83 - 85 4 barrel intakes are on ebay all the time for under $50 before shipping. You will need to change gears tho to feel any of the improvements. The 79 may have the odd ball 6.5 or 7" rear. I think you need atleast a 7.5 to move up ratios. if you go with the summit kit get a set of their mustang headers too.
Where have you ever seen a 11 second 2 barrel equiped car?You are talking 1/8 mile drag strip right ?You say it doesnt matter ,so why dont you try a 600cfm 2 barrel on your STREET car and see how it performs.I bet it runs like a slug compared to your current set up.Not flaming you ,but who in the hell would want a 2 barrel for a performance street car or race car(except if you HAVE to for a race class)?
