They probably said that because they sensed that you are already in love with the car and almost sold on buying it. IMHO your head is in the wrong place on this deal. You need to be cold, calculating, and logical if you want to buy this car for a reasonable price. Start off with the lowball offer, see what happens and negotiate from there. All that talk about "teksid block" and "hand built engines" is just static, ignore it and focus on making the best deal you can. I think you have your work cut out for you though because I think you are too in love with this car. Speaking from personal experience, buying a car you are in love with can be painful...Yeah, I'd like the car, but the stealership threatened to RAISE the price if the car is still on their lot in 30 days. I told them, good luck with that.

What I would do is go back there, make the initial opening lowball offer. Let them laugh or whatever for a while make some small talk and then walk. Maybe mention you are going to look at some other Cobras you found nearby through internet searches... I guaran-F'N-tee that in a few days they will call you and say something like their GM is back from vacation and suprise surprise he is actually willing to consider your lowball offer. OR they will at least call you back with a counter offer.
Since we are going into spring the odds are stacked a little in the dealer's favor because the chumps get spring fever this time of year. However, since it is not a vert and since gas is really high right now this may not be that much of a factor in the negotiations.

I just did an autotrader search for 96-98 Mustang V8s with manual transmissions, less than 60K miles, throughout the whole country, and now I'm thinking that this car is not THAT overpriced.
I'll sell you my 98 in Cleveland for $13K, its on auto trader.com, 50K miles
